NIST defines 1 U.S. fluid ounce as 29.57353 milliliters. The rounded 30 mL value is easier to use, but it is not exact.

The Specialty Coffee Association article records the traditional 25–35 mL range for a single and says to double it for a double. The same article explains that current recipes vary. Treat the range as context, not a required target.

Fluid ounces and mass ounces are different

A fluid ounce measures volume. An ounce by mass measures weight. They share a name, but they do not measure the same thing.

This difference matters with espresso. The drink has liquid and crema. Crema is the foam layer above the liquid, as the National Coffee Association explains. Its amount can change the line you see on the cup.

Do not assume that 1 fluid ounce of espresso weighs 1 ounce by mass. Do not convert 30 mL to 30 g as if every espresso has one fixed density.

For a menu or cup-size question, use fluid ounces or milliliters. For a repeatable recipe, use grams.

Dose means the dry coffee in the basket. Yield means the espresso that reaches the cup. Put the cup on a scale, set it to zero, and stop at the drink mass for your recipe.

For example, an 18 g dose at a 1:2 ratio has a target drink mass of 36 g. That is a mass calculation. It does not say that the drink will fill 36 mL. Use the espresso ratio calculator for another dose or ratio.

Why machine buttons do not settle the question

The buttons on one machine can use the familiar one- and two-ounce references without creating a rule for every machine.

The current U.S. Breville Barista Express BES870 manual lists about 1 fluid ounce or 30 mL for its one-cup preset. It lists about 2 fluid ounces or 60 mL for its two-cup preset. The manual also lets the user reprogram the amount or stop the shot manually. It says cup output can vary with grind size and grind amount.

That makes the button a useful starting point for this machine family. It does not guarantee the same amount on another machine, or even after the BES870 setting changes.

Why the cup can make the answer look wrong

A cup does not show espresso volume with the precision of a marked measuring vessel. A wide cup makes the same drink look shallow. A narrow cup makes it look deeper. A curved base and a thick wall can also make a visual estimate difficult.

Crema adds another moving part. The foam can rise after the shot starts and settle while the cup rests. The NCA source confirms that crema sits above the liquid, but it does not supply a fixed correction. Do not subtract a guessed crema amount or use the top foam line as an exact liquid measurement.

If you need a serving-volume reference, use a vessel with clear volume marks. Read it at the same point each time. If you need a repeatable recipe, use a scale instead. A cup line can help you understand size. It is not a substitute for drink mass.

The number printed on a cup is also the cup's capacity, not the amount that every shot must fill. A 3-ounce cup can hold a 1-ounce single or a 2-ounce double with room above it. The cup size does not rename the recipe.

Single, double, and basket labels

The words single and double can refer to a serving, a machine button, or the basket in the portafilter. Those labels often point in the same direction, but they do not guarantee one exact dose or output.

Use this order when a label is unclear:

  1. Check the exact machine manual.
  2. Check the basket's stated dose range.
  3. Record the dry dose in grams.
  4. Record the drink mass in grams.
  5. Use fluid ounces only when the serving volume itself matters.

A cafe can build drinks around a double basket and divide or serve the result according to its own menu. A home machine can call a button two cup while allowing that button to be reprogrammed. Ask for the shot count when caffeine or menu value matters. Use dose and yield when the recipe matters.

Do not infer the dry dose from a one-ounce or two-ounce serving label. The approved sources do not define one dry coffee amount for every drink in those volume ranges.

One source reports a unit conflict

The SCA article reports average volume results of 1.8 ounces or 74.2 milliliters from respondents who measured by volume. Those values are not equal under the NIST U.S. conversion. A value of 1.8 U.S. fluid ounces is about 53.2 mL, not 74.2 mL.

The article does not explain the difference. We do not use that pair as a conversion. We use its separate survey result instead: 82% of respondents measured espresso yield by weight. That result supports the mass-first home method, but it does not make one recipe universal.

A simple home method

  1. Check the basket dose range and the exact machine instructions.
  2. Measure the dry coffee dose in grams.
  3. Choose a brew ratio.
  4. Put the cup on a scale and set the scale to zero.
  5. Stop the shot at the target drink mass.
  6. Record the dose, drink mass, time, and taste.
  7. If you change the recipe, change one item at a time.

Three common measurement mistakes

Mistake 1: treating 30 mL as 30 g

The two numbers can look interchangeable, but one is volume and one is mass. The NIST record does not establish the density of espresso. Crema and recipe differences make a fixed drink conversion especially weak.

Keep the labels beside the values. Write 30 mL for a rounded one-fluid-ounce volume reference. Write 30 g only when a scale shows a 30-gram drink mass.

Mistake 2: stopping at a cup line without recording dose

The same visible amount can come from different dry doses and flow patterns. A serving line alone cannot tell you the brew ratio. Record the dose and drink mass together when you want to repeat the recipe.

Mistake 3: using volume to estimate caffeine
