Why your espresso tastes sour—even at 30 seconds

A measured way to diagnose sour espresso without treating 30 seconds as a guarantee or changing every variable at once.

Time is evidence, not a finish line

Dose, beverage yield, and time are useful because they make one shot comparable with the next. They do not measure extraction yield or tell you whether water moved evenly through the puck. A nominal 1:2 recipe in 30 seconds can therefore be a useful baseline and still taste wrong.

Start by separating a clearly fast shot from a normal-looking shot. A target reached in roughly 18 seconds is a different diagnostic situation from a target reached around 30 seconds with even-looking flow.

Choose one lever

When the shot is clearly fast, keeping dose and target yield fixed while moving one repeatable step finer tests puck resistance. When the flow is not clearly fast, extending yield while keeping grind fixed tests whether more extraction improves balance.

Do not change grind, dose, yield, and temperature together. A better cup would not tell you which change helped, and a worse cup would not tell you which one to undo.

  • Fast flow: test one small step finer.
  • Even flow at a plausible time: test a modestly longer yield.
  • Sour plus bitter or spraying: repeat after improving distribution and tamp level.

Know when the coffee is the answer

Acidity can be an intended part of a light-roasted coffee. The diagnostic goal is not to erase every bright flavor; it is to find whether the cup becomes sweeter, clearer, and more balanced for you.

If controlled yield and grind experiments do not move the cup in a useful direction, check water, coffee age, roast expectations, machine temperature behavior, and whether the café or roaster describes the coffee similarly. Espresso Receipt does not infer those facts from time alone.

Questions, answered without fake certainty

Should I always grind finer for sour espresso?

No. A clearly fast shot is a good reason to test finer grinding. If the shot is already slow, spraying, or sour and bitter together, finer grinding can obscure an evenness problem. If flow looks even and time is plausible, a longer yield is a cleaner first test.

Is 1:2 in 30 seconds automatically correct?

No. It is a common baseline that makes measurements comparable, not a pass-fail standard for every coffee, grinder, basket, and preference.

Can light-roast espresso taste acidic when correctly brewed?

Yes. Intended fruit acidity and unpleasant sharp sourness are sensory judgments, not values the tool can measure. Compare controlled recipe changes and the roaster’s description rather than forcing every coffee toward the same flavor.
