Espresso shot running too fast: the next useful test

A fast shot usually calls for more resistance, but only when dose and yield are measured and preparation is repeatable.

Evidence boundary

This guide translates measured recipe inputs and user-observed taste or flow into a conservative next experiment. It does not measure extraction yield, see the puck, detect channeling, or physically test your equipment.

Measure what finished

A fast shot only has meaning when the endpoint is measured. Twenty seconds to 20 grams is not the same recipe as twenty seconds to 50 grams. Record dry dose, beverage mass, and time from a consistent starting event.

The Shot Lab uses time as a broad flow signal and never treats it as a direct measurement of extraction yield.

Add resistance without moving the goal

Keep dose and target yield fixed, move one small grinder step finer, and repeat preparation as consistently as possible. The next shot should take longer because resistance changed, not because you stopped at a different beverage mass.

Avoid jumping several settings. If the shot stalls or becomes visibly uneven, return toward the previous setting and check distribution.

When not to grind finer

Spraying, one-sided flow, or simultaneous sourness and bitterness should trigger an evenness check. Research and practitioner guidance both caution that grinding progressively finer can reduce repeatability when flow becomes nonuniform.

A pressurized basket, preground coffee, or grinder with large steps may limit how cleanly this experiment can be run. Follow the equipment manufacturer’s instructions and record that limitation.

Questions, answered without fake certainty

When should I start the shot timer?

Use one consistent event for every comparison—commonly pump activation. The absolute convention matters less than applying the same convention to consecutive shots.

Can I add more coffee instead of grinding finer?

Dose also changes puck resistance, but it changes the recipe and basket fill at the same time. Keep dose stable for the first experiment unless the current dose is outside the basket manufacturer’s range.

Is a fast shot always sour?

No. Taste and flow are related observations, not interchangeable labels. Record both.
