This guide translates measured recipe inputs and user-observed taste or flow into a conservative next experiment. It does not measure extraction yield, see the puck, detect channeling, or physically test your equipment.
One average can hide two extractions
Dose, yield, and time summarize the whole shot. They cannot show whether some water moved quickly through a weak path while other areas resisted flow. A cup can therefore combine sharp under-extracted sensations with dry or bitter ones.
Visible spraying is a useful warning, not a laboratory measurement. A spouted portafilter can hide it, and a bottomless portafilter can make harmless variation look dramatic. Treat appearance as one observation alongside taste and repeatability.
Reset before re-tuning
Dry the basket, distribute to an even depth, tamp level, and repeat the same dose, yield target, grind, and temperature setting. This makes preparation the only intended change.
If the repeated shot becomes more coherent, continue from that cleaner baseline. If it remains conflicting without visible flow problems, test the coffee and recipe systematically rather than labeling the puck from taste alone.
- Keep the grind fixed for the reset shot.
- Use the same measured dose and yield.
- Change one preparation behavior you can repeat.
- Record whether the next shot is more consistent, not merely prettier.
Why finer is not always safer
Peer-reviewed espresso research found lower and less reproducible extraction at both very coarse and very fine settings under the studied conditions, consistent with nonuniform flow at the fine end. That does not establish your exact grinder setting, but it rejects the idea that finer must always be better.

Does sour and bitter prove channeling?
No. It is a reason to check evenness, not proof of channeling. Coffee character, water, temperature, cleanliness, and sensory confusion can produce overlapping descriptions.
Should I use a bottomless portafilter?
It can make some flow problems easier to see, but it is not required for the reset experiment and does not replace taste or repeatability.
What should stay constant?
Keep dose, target yield, grind setting, and temperature setting constant while improving distribution and tamp level.
